White Chicken Chili
White Chicken Chili

Carroll Shelby’s White Chicken Chili packet
2 pounds chicken
1 small white onion chopped
1 rutabaga peeled and cubed
14.5 oz can of fire roasted tomatoes with chilies
1 tablespoon of coconut oil (or oil of your choosing)
1 tabelspoon of chili powder
1 teaspoon of paprika

– In a stockpot add coconut oil and onion

– Cook onion until it is translucent

– Add chicken and rutabaga and cook until chicken is brown

– Add chili packet contents (I omitted the cayenne pepper), chili powder, paprika and fire roasted tomatoes with chilies

– Stir together and bring to a boil

– Turn down to low and simmer for 30 minutes covered

– Simmer an additional 30 minutes uncovered
