Paleo Banana Pancakes are a favorite at our house. They are quick, simple and delicious. The recipe below is for one serving. If you are feeding a crowd, just simply multiply the ingredients by the number of people you will be serving.
Paleo Banana Pancakes
Makes 3 small pancakes, serves 1
- 1 full sized banana (ripe)
- 1 egg
- pinch of cinnamon
- Coconut oil for frying
- Maple syrup (optional)
- Strawberries, blueberries or any fruit of your choosing for a topping
Step 1 – Blend the banana, egg and cinnamon in a food processor.
Step 2 – Heat the coconut oil in a non stick frying pan on medium heat. Using an 1/8 – 1/4 measuring cup, spoon the mixture onto the pan and wait until bubbles appear. Carefully turn over and cook on the other side.
Step 3 – Add maple syrup, fruit and ENJOY!
- I freeze ripe bananas so they are readily available for cooking
- These pancakes are smaller than a “traditional” one made with flour. Also, because there is no flour holding the ingredients together it can take a few attempts to find the right “flipping” technique for you. After many ugly pancakes, I have found that an 1/8 – 1/4 cup of the mixture works the best.
